Matts sourdough cocnut pancakes


This is a result of being bored one Saturday morning and having really nothing around to eat. My options were flour, 10 grain cereal, milk or eggs. Well, i decided to be creative and i threw it all together and the results....


The most amazing pancakes ever. I let the batter rest for 30 minutes or so to soften the grains a we bit. Below is the recipe and process to follow:

  • 1 cup all purpose flour
  • 1/2 cup bobs red mill 10 grain cereal
  • 3 tsp baking powder
  • 3 tbls coconut oil or olive oil
  • vanilla and cinnamon to taste
  • 1 egg
  • 1 tbls white or brown sugar
  • 1/3 cup sour cream
  • enough milk to make a smooth batter to your liking
Mix all the ingredients together in a bowl and whisk. Allow to rest for 20 or 30 minutes to soften the grains. Once allowed to rest, cook on medium heat with coconut oil. Serve with warm syrup and fruit.
